Do you know why I love Japanese cuisine ? Because it reflects their culture, like any culture after all. Minimalism in execution, primitive compositional techniques, a few words many acts, a few ingredients many flavors, few YESes, many NOs in their restaurants.

In this case, I wasn’t just lucky to taste those dishes, I simply worked hard.
